Mom's Oyster DressingFree Eat & Explore Virginia Cookbook Recipe Oyster Dressing
1 pint Chincoteague Oysters
1½ loaves day old bread
2 teaspoons poultry seasoning
1 small onion, chopped
3 stalks celery, chopped
Turkey essence
Turkey giblets, chopped
Salt and pepper to taste

Drain oysters, reserving juice. Rinse and check oysters for shells. Break bread into pieces and combine with poultry seasoning, onion, celery, turkey essence, giblets, salt, pepper and reserved juice; mix well. Fold in oysters and spoon mixture into a greased 9x9-inch pan. Bake at 350° for 40 to 45 minutes until dressing is lightly browned on top.

Crab Cakes
Free Eat & Explore Virginia Cookbook Recipe - Crab Cakes

½ cup rice flour
½ teaspoon seafood seasoning
½ teaspoon dried basil
½ teaspoon lemon pepper
½ cup mayonnaise
½ teaspoon Italion season
2 ½ pounds crabmeat
Cornmeal

Oil for frying
Whisk together flour, seafood seasoning, basil, lemon pepper, mayonnaise and Italiam seasoning in mixing bowl. Add crabmeat and toss by hand until coated. Cover and refrigerate 45 minutes. Make patties and coat in cornmeal before cooking. Cook in hot oil until golden brown.

Mulled Cider
Free Eat & Explore Virginia Cookbook Recipe - Mulled Cider

1 gallon apple cider
1 tablespoon whole cloves
3 cinnamon sticks
4 to 6 orange slices
½ cup fresh cranberries

In a large pot, combine all ingredients and bring to a boil. Reduce heat and simmer 20 minutes.Serve Mulled Cider hot strained into serving cups.

Pasta Salad
Free Eat & Explore Virginia Cookbook Recipe Pasta Salad

8 ounces pasta, any type
½ small red onion, chopped

Choose 3 of the following vegetables:
1 medium tomato, chopped
1 small zucchini, sliced
¼ cup chopped celery
¼ cup sliced carrots
½ cup chopped broccoli
¼ cup favorite salad dressing

Prepare pasta according to package directions. Steam fresh vegetables 3 to 5 minutes. Add vegetables to pasta and stir in salad dressing.
