Biloxi Bay Potato Salad

1 pound boiled Mississippi Gulf Shrimp, cleaned and peeled (small to medium)
6 to 8 medium potatoes, boiled whole just until done (don't over-cook)
5 to 6 green onions, chopped
2 stalks celery, finely chopped
4 to 5 eggs, boiled and chopped
1 cup sweet relish
1 tablespoon prepared mustard
1 cup salad dressing (mayonnaise based)
Cajun seasoning, to taste
Salt and pepper, to taste

Cut boiled potatoes in pieces (about 1-inch; not too small). Combine all ingredients and serve. Biloxi Bay Potato Salad is great served with gumbo.
