1 1/2 cups creamy peanut butter
1/2 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon salt
3 to 4 cups powdered sugar, divided
2 cups semisweet chocolate chips
2 tablespoons vegetable shortening

Combine peanut butter, butter, vanilla and salt in large bowl. Mix with blender on low until blended. Add 2 cups powdered sugar, beating on low until blended. Beat in additional powdered sugar until when a small amount of the mixture is shaped into a ball it is stiff enough to remain on a toothpick. Shape into 1-inch peanut butter balls and refrigerate. Place chocolate chips and shortening in microwave-safe bowl. Microwave 30 seconds, stir, repeat until mixture is smooth. Reheat as needed. Be careful not to overheat. Line a cookie sheet in wax paper. Insert toothpick in peanut butter ball. Dip three quarters into chocolate. Leave enough uncovered on top to resemble a buckeye. Allow excess chocolate from the peanut butter ball to remain in bowl. Place on wax paper. Refrigerate Buckeyes until firm.
