Easy Chicken Cheese Enchiladas

1 envelope taco seasoning mix
1 tablespoon olive oil
1 cup water
1 pound boneless skinless chicken breasts, sliced
1/3 cup chopped fresh cilantro
1/2 teaspoon salt
1 can green chiles
1 jar salsa
6 to 8 flour tortillas
1 container ricotta cheese
2 cups shredded Monterey Jack cheese

In a skillet, combine first 8 ingredients and cook until chicken is done. Working quickly, remove skillet from heat and spoon equal amounts into flour tortillas adding a spoonful of ricotta cheese. Leave as much juice/sauce/drippings in the skillet as possible. Place wrapped and filled tortillas in a treated glass baking dish. Spoon skillet juice over top. Top with cheese and bake Chicken Cheese Enchiladas at 350° until cheese is melted.
