Kim's Bean Soup Recipe

Kim's Bean Soup

1 pound Great Northern beans
1/4 pound lima beans
1 ham hock
1 beef knuckle bone
1 medium white onion
2 stalks celery, whole
4 cloves garlic, minced
2 teaspoons salt
1/2 teaspoon pepper
2 (16-ounce) cans stewed tomatoes
1/4 cup chopped onions
1/4 cup chopped celery
Fresh cilantro, optional
Tabasco, optional
Cooked, shredded chicken, optional
Green onions to garnish

Wash both beans. Cover with water and soak overnight. Drain and cover with fresh water. Bring beans to a boil. Remove from heat and let stand 30 minutes. In another large pot, place ham hock, whole medium onion, whole celery stalks, garlic, salt and pepper. Boil 1 hour; remove celery stalks. Add beans. If necessary, add water to cover beans. Boil slowly several hours until beans are done. Add remaining ingredients; heat. Add salt to taste. Garnish Bean Soup with green onions when serving.
