Chicken Salad Recipe

Mom’s Chicken Salad

6 chicken breasts
3 boiled eggs, chopped
1 cup diced celery
1 can diced water chestnuts
1 cup diced onion
3⁄4 cup chopped pecans
1⁄2 cup grated cheese
1 1⁄2 cups Mom’s Quick Sweet Pickles (see recipe below)
1 cup Miracle Whip
Salt and pepper to taste
1⁄3 cup sugar (optional)

Boil chicken till tender and dice into small chunks. Add next 8 ingredients, salt and pepper to taste, and mix thoroughly. Feel free to add more Miracle Whip for desired consistency. Sweeten with sugar if you like and mix well. Keep cool till served.
