Mom's Potato Salad Recipe - Texas Cookbooks

Mom's Potato Salad

6 medium potatoes
2 teaspoons salt (or to taste)
2 eggs, boiled and chopped
1 tablespoon dried onion 
½ cup sweet relish
½ cup sliced black olives, optional
1 small jar red pimentos
1 cup mayonnaise (or to taste)
2 tablespoons parsley

Wash and boil potatoes, with skins, about 30 minutes or just until cooked through; cool. When potatoes are cool enough to handle, peel and cut into ½-inch cubes. Add remaining ingredients. Serve Mom's Potato Salad immediately.
