Mozzarella Sticks

1 cup self-rising flour
2 cups buttermilk
2 cups seasoned breadcrumbs
1 pound mozzarella cheese (square loaf )

Preheat deep fryer to 350°. (If you do not have a deep fryer, preheat 2 inches canola oil in a skillet.) Place flour in a small bowl. Place buttermilk in another bowl. Place breadcrumbs in a third bowl. Slice mozzarella cheese into 4 equal slices; cut each slice into 6 sticks. Toss sticks in flour. Dip in buttermilk. Coat with breadcrumbs. Dip in buttermilk again. Recoat with breadcrumbs. Drop Mozzarella Sticks carefully into heated oil. Cook until golden brown and floating. DO NOT OVERCOOK. Remove and place on paper-towel lined plate. Serve Mozzarella Sticks with warm marinara, cold ranch or whatever tickles your fancy. Yields 24 sticks.
