No Raw Egg Eggnog Recipe

No Raw Eggs in my Eggnog, Please

4 cups milk, divided
1 (3.4-ounce) package instand vanilla pudding
1 (8-ounce) carton fat-free egg product, thawed
1 teaspoon vanilla extract
1/4 cup light rum (can substitute 1 teaspoon rum extract)
1/4 teaspoon salt
1/4 teaspoon nutmeg
Whipped cream, optional

Combine 2 cups milk with pudding; beat 1 minute or until slightly thickened and smooth. Add remaining 2 cups milk with reamining ingredients (except whipped cream). Beat well. Cover and refrigerate until serving time (at least 2 hours or overnight). Serve No Raw Eggs in my Eggnog, Please Recipe topped with whipped cream and a sprinkle of nutmeg, if desired.
