Oatmeal Lace Cookies Recipe

Oatmeal Lace Cookies

1/2 cup butter (real butter; margarine will not work), melted
1 1/2 cups rolled oats
1 egg
2/3 cup sugar
1 teaspoon baking powder
1 tablespoon flour

Preheat oven to 350 degrees. Combine butter and oats; set aside. In a separate bowl,beat egg until foamy. Add sugar and beat until light and fluffy. Stir in baking powder and flour. Fold in oat mixture. Grease and flour cookie sheets. Drop batter by tablespoons about 3 inches apart on cookie sheet. Bake until golden. Watch carefully; cookies will caramelize and burn easily. Cool cookies 1 minute then remove from sheets onto cooling racks. Cookies are very crispy and thin.
