Pasta Torta

Torta is Italian for pie or cake. This is truly a pasta cake. Delicious and looks great.

1 pound vermicelli pasta
3/4 pound Sausage
4 tablespoons butter or margarine, divided
1/2 cup flour
3 cups chicken stock
1/4 teaspoon white pepper
1 teaspoon lemon juice
1/4 cup grated Parmesan cheese
1 2/3 cup grated Cheddar cheese, divided
4 eggs, beaten
1/2 teaspoon salt
1 tablespoon oil
3/4 cup chopped bell pepper
1 3/4 cups chopped onion
3 tablespoons chopped parsley
1/2 teaspoon black pepper
1 tomato, sliced (optional)

Preheat oven to 375 degrees. Coat 10- to 12-inch springform pan with nonstick spray. Cook pasta in boiling water; drain. Return to boiler and place in freezer to cool quickly (or make ahead and start remainder of dish when pasta has cooled). While pasta is cooking, brown sausage in a skillet; set aside. Add oil and 1 tablespoon butter to skillet and sauté peppers and onions until limp. Combine sausage, peppers, 2/3 cup Cheddar cheese, parsley, and black pepper. In a clean skillet, make a white sauce by melting 3 tablespoons butter in skillet; add flour and mix well. Slowly pour in chicken stock and simmer until sauce thickens. Add white pepper and lemon juice. Reserve 1/2 white sauce; pour other 1/2 over pasta. Add Parmesan cheese, 1 cup Cheddar cheese, eggs and salt; mix well. Put 1/2 pasta mixture into springform pan. Make a depression in the middle leaving 1/2-inch space around edges. Heap sausage mixture into depression, mounding it in the middle. Pat down. Cover with sliced tomatoes, if desired. Place remaining pasta on top and smooth over. Cover with foil and bake 30 to 35 minutes; remove foil and bake 5 to 10 minutes longer, until top is brown. Allow to cool 5 to 10 minutes before removing outside ring. Serve Pasta Torta sliced with remaining white sauce drizzled over top.
