Ramp & Sausage Casserole Recipe

Ramp & Sausage Casserole

1 pound pork sausage,browned
4 eggs, beaten
2 cups milk
1 tablespoon minced garlic
1 teaspoon salt
1 teaspoon pepper
8 small potatoes, sliced
15 ramps, chopped
2 cups shredded Cheddar cheese

Directions for Ramp & Sausage Casserole: Brown sausage; drain. In a bowl, combine eggs, milk, garlic, salt and pepper. In a large greased baking dish, layer ½ potatoes, ½ sausage and ½ chopped ramps. Repeat layers then gently pour egg and milk mixture over top. Bake at 350° until potatoes are tender, 30 to 40 minutes. Before removing Ramp & Sausage Casserole from oven, top with cheese. Cook until cheese is melted.
