Sicilian Sweet Spaghetti Recipe

Sicilian Sweet Spaghetti Sauce

1 large Spanish or sweet onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 large can whole tomatoes, slightly crushed (no seasonings added)
3 (12-ounce) cans tomato paste (no seasonings added)
8 to 12 cups water
Sweet basil
1 cup sugar

In a large Dutch oven, over medium heat, mix onion, garlic and oil. Cook until onion is just tender. Add tomatoes, tomato paste and water. Stir until thoroughly mixed. Sprinkle enough sweet basil to make a layer over the top of entire Dutch oven and mix. Add sugar; don’t be afraid, the sauce is supposed to taste sweet! (I usually use more than a cup depending on how sour the tomato paste is.) Serve Sicilian Sweet Spaghetti Sauce over angel hair or spaghetti.

This sweet spaghetti sauce recipe came to me from a Sicilian woman who used to cook in an Italian restaurant in Manhattan. She says that a young Frank Sinatra regularly requested this sauce upon his frequent visits. It is very simple and, I think, very good.
