Sweet Potato Pie free recipe from Texas Cookbooks

Sweet Potato Pie


1 pound sweet potatoes
½ cup butter, softened
1 cup sugar
2 eggs
½ cup milk
½ teaspoon Fiesta Brand® Ground Nutmeg
½ teaspoon Fiesta Brand® Cinnamon
1 teaspoon vanilla
1 (9-inch) pie crust, unbaked
Powdered sugar


Boil sweet potatoes whole in skin until done, about 35 to 45 minutes. Remove skin and break potatoes apart in a large bowl. Add butter, and mix well. Stir in sugar, eggs, milk, nutmeg, cinnamon and vanilla. Use an electric mixer and beat on medium speed until mixture is smooth. Spoon filing into an unbaked pie crust and bake at 350° for 1 hour. Allow pie to cool. Serve in slices topped with a few sprinkles of powdered sugar.
