Thin-Sliced Loin Appetizer with Sour Cream Dip

Venison loin
Cotton twine
Vegetable oil
4 green onions
1 (16-ounce) container sour cream
Salt
White or black pepper
Prepared honey mustard
Natural wooden toothpicks

Preheat oven to 350 degrees. Tie loin every inch with cotton twine and coat with vegetable oil. Place on rack in roasting pan and roast to internal temperature of 138 degrees, about 30 to 45 minutes. While loin is roasting, finely chop white part of green onions and mix into sour cream. Mix in salt and pepper to taste. Slice 1 tablespoon green onion tops and sprinkle on top of sour cream. Refrigerate sour cream mixture until ready to serve.When internal temperature of loin reaches 138 degrees, remove from oven, wrap in foil and allow to rest 15 minutes before slicing thin. Spread a little honey mustard on each slice, roll and secure with a toothpick. Serve with sour cream mixture on the side.
