Southern Vegetable Soup


1 ham hock
2 quarts (8 cups) water
2 (14-ounce) cans tomatoes, coarsely chopped
3 medium potatoes, peeled and sliced
1 (8-ounce) can corn
1 large onion, chopped
1 can butter beans
1 cup sliced okra
Salt and pepper to taste


Combine all ingredients in slow cooker. Stir. Cover and cook on low 8 to 10 hours. This soup is really good with cornbread. Southern Vegetable Soup Recipe serves 8.
